An Oaklander Won Kellogg's Baking Contest

Local musician Sara Mellas incorporated Frosted Flakes into a fancy fruit tart.

An Oakland resident has won Kellogg's first-ever Holiday Baking Challenge.

Emmy Award-winning TV personality and cookbook author Padma Lakshmi judged the event, which challenged bakers nationwide to create outstanding holiday recipes containing Kellogg's Frosted Flakes.

In her prize-winning recipe for Kellogg's Frosted Flakes® Pear Berry Tart, which is depicted above, Oakland recipe developer — and classical music conductor — Sara Mellas incorporated the famous flakes into flour for the crust, then also infused the flakes' flavor into the tart's creamy mascarpone filling. Flakes were also an ingredient in the sugar cookies with which Mellas adorned the finished tart.

"I loved the creative and artistic components of the challenge," said Mellas.

"I like to describe my baking as whimsical – making dishes look beautiful in a fun and inventive way, but most importantly, they have to be tasty. Frosted Flakes were the ideal cereal choice to incorporate into the tart as they add the perfect texture to crusts and a subtle flavor to the filling that complemented the pear and berry flavors."

In a competition timed to match the one-year anniversary of Kellogg's NYC Café in ... well, NYC, each competitor fused Kellogg's cereals with familiar desserts such as creampuffs, cheesecake, and pie. 

"Cereal is fun to play with in a bowl as well as in cooking and baking. I chose the Kellogg's Frosted Flakes Pear Berry Tart because of its ingenuity and seamless use of cereal," said Lakshmi, the Top Chef host and executive producer whose long performance resume includes 30 Rock, RuPaul's Drag Race, Star Trek: Enterprise, and the film version of the Oakland-based novel The Mistress of Spices. Her first book, Easy Exotic, won a Gourmand World Cookbook Award in 1999.

"It was so creative to steep the Kellogg's Frosted Flakes in heavy cream, with no additional sugar. The use of cereal was so smooth and fun for the holidays, yet simple enough to be easily replicated at home," Lakshmi said.

Mellas received a trophy, and her recipe will be featured at Kellogg's NYC Café for a limited time.
